ZENNON WIJLENS

At the helm of the Paris Butter kitchen is Chef Zennon Wijlens, celebrated as Cuisine NZ’s 2023/2024 Chef of the Year and Best Chef 2025 at the Metro Restaurant of the Year Awards.

Zennon was also honoured internationally at The Best Chef Awards 2025, taking home two Chef Knives among the world’s top culinary talent — a reflection of his growing influence on the global stage.

With a culinary journey spanning over two decades, Chef Wijlens brings a wealth of experience and passion to Paris Butter. His philosophy centres on creating dishes that evoke emotion and tell a story, all while showcasing the rich flavours and textures of local ingredients.

NICK HONEYMAN

Nick Honeyman, Co-Owner and Chef of Paris Butter. Alongside Zennon, Nick has helped to transform Paris Butter from a bistro to creative fine dining. Nick’s Focus has been split across not only Paris Butter but also our sister restaurant Le Petit Léon based in the south of France. His most recent acknowledgement was achieving his first Michelin Star at Le Petit Léon. Nick’s Ideas and concepts are also inspired by memories and travel and are still very much present in our evolution menu.

Joe Costello

Restaurant Manager and Beverage Director Joe’s journey has taken him from a Michelin-recognised restaurant in Ireland to hatted establishments in Sydney and Auckland, with experience at Sidart and The Wine Room shaping his expertise in hospitality and wine. His passion lies in creating memorable dining experiences that connect food, wine and people. We cannot wait for you to meet Joe and experience the care he brings to the floor at Paris Butter.
